Locally Grown Fava Beans from Groundwork Organics

It's a scrumptious time of year in Portland. The streets are lined with flowers, sunset is nearing 9 o'clock, and there's plenty of crisp and sweet local produce to pack into picnic baskets. 

Almost every spring vegetable and herb is tender enough to make into a salad, and a few of our favorites have just arrived. Fava beans may take a little extra work, but the reward is worth it. Blanch the beans and pair with mintdill, goat cheese, and a nice big glug of good olive oil. Look for plump and bright green Sugar Snap Peas as the crunchy component in salads or the star of cruditès. First of the season Persian Cucumbers are sweet, petite, thin-skinned, and perfect for those viral smashed salads with chili crisp and Chives. A simple green salad is far from boring with fresh, local lettuces like Flashy Lightning Mini Oak lettuce as the base. And for a little bit of that springtime je ne sais quoi? Edible flowers! Everything is tastier with a flourish
of flowers. 

Don't forget about strawberries! They're at their peak and eating deliciously. Keep an eye out for coveted Hood strawberries. They're available now, and their brief season
is fleeting!
